Cookbook
Turns out I like to cook. Here are some of my favorite recipes.
Spaghetti Carbonara
Prep time: 10 min | Cook time: 15 min | Serves: 4
Ingredients
- 400g spaghetti
- 200g guanciale or pancetta, cubed
- 4 large eggs
- 100g Pecorino Romano cheese, grated
- Black pepper
Instructions
- Boil salted water for pasta.
- Fry guanciale in a pan until crisp (medium heat).
- In a bowl, whisk eggs and cheese with plenty of black pepper.
- Cook pasta al dente. Reserve 1 cup of pasta water.
- Toss hot pasta with guanciale fat, remove from heat. Quickly mix in egg mixture to create a creamy sauce. Add pasta water if needed. Serve immediately.
Chicken Tikka Masala
Prep time: 20 min | Cook time: 40 min | Serves: 4
Ingredients
- 500g chicken breast, cubed
- 1 cup yogurt
- 2 tbsp tikka masala spice mix
- 1 onion, diced
- 1 can tomato puree
- 1/2 cup heavy cream
- Fresh cilantro
Instructions
- Marinate chicken in yogurt and half the spices for at least 1 hour.
- Grill or sear chicken pieces until charred. Set aside.
- Sauté onion, add remaining spices and tomato puree. Simmer for 10 mins.
- Add cream and chicken to the sauce. Simmer for another 10 mins until chicken is cooked through.
- Garnish with fresh cilantro and serve with rice or naan.
Classic Chocolate Chip Cookies
Prep time: 15 min | Cook time: 10 min | Serves: 24
Ingredients
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 cup butter, softened
- 3/4 cup sugar, 3/4 cup packed brown sugar
- 1 tsp vanilla extract, 2 large eggs
- 2 cups chocolate chips
Instructions
- Preheat oven to 375°F (190°C).
- Mix flour, baking soda, and salt in a small bowl.
- Beat butter, sugars, and vanilla until creamy. Add eggs, one at a time.
- Gradually beat in flour mixture. Stir in chocolate chips.
- Drop rounded tablespoons onto ungreased baking sheet. Bake 9 to 11 minutes until golden brown.
